A Practical Treatise On Materia Medica And Therapeutics (1899) $54.29 Purchase of this book includes free trial access to www.million-books.com where you can read more than a million books for free. This is an OCR edition with typos.Excerpt from book:stomach. We learn, also, that appetite, hunger, etc., contribute no element to the process, but serve merely as a reminder that the time for taking food has come. It follows, also, from the foregoing considerations, that Debove’s powder, or similar aliment, may be administered as a medicament, and that the nutrition will be as favorably affected by it as various morbid states are by an involuntary medication. BEVERAGES. Coffee.— The seed of Caffea Arabica ; cafe, Fr. ; Kaffee, Ger. Composition.—Coffee contains an alkaloid — caffeine — which is nearly, if not quite, identical with theine, a principle found in tea; a volatile oil ; a form of tannic acid ; sugar, gum, etc. The tannic acid is that variety known as caffeo-tannic, or caffeic. The peculiar odor and flavor of roasted coffee are due to the caffeic acid, which is, in part, converted into methylamine ; to the aromatic oil; doubtless, also, to the sugar, which is changed into caramel. Preparations.—Coffee is never used in the raw state as a beverage. After roasting, it is made into an infusion or decoction. An infusion made at a low temperature, which should not exceed 200 Fahr., is better than a decoction. If the heat be too great, those aromatic constituents which impart to coffee its special aroma, are dissipated. Coffee is now usually prepared by the process of percolation. The best product is obtained by steeping the coffee for some time in hot water. Coffee can be ” settled,” or clarified, by the addition of some white of egg, or isinglass, or by pouring on from a height some cold water. Tea.— The dried leaves of Camellia Thea ; the, Fr. ; Thee, Ger. Composition.—The constituents of tea are very much the same as those of coffee : theine ; an aromatic oil ; sugar and gum, |

Aus Wikipedia. Nicht dargestellt. Auszug: Caffeine is a bitter, white crystalline xanthine alkaloid that is a psychoactive stimulant drug. Caffeine was discovered by a German chemist, Friedrich Ferdinand Runge, in 1819. He coined the term kaffein, a chemical compound in coffee (the German word for which is Kaffee), which in English became caffeine (and changed to Koffein in German). Caffeine is found in varying quantities in the beans, leaves, and fruit of some plants, where it acts as a natural pesticide that paralyzes and kills certain insects feeding on the plants. It is most commonly consumed by humans in infusions extracted from the bean of the coffee plant and the leaves of the tea bush, as well as from various foods and drinks containing products derived from the kola nut. Other sources include yerba mate, guarana berries, and the Yaupon Holly. In humans, caffeine is a central nervous system (CNS) stimulant, having the effect of temporarily warding off drowsiness and restoring alertness. Beverages containing caffeine, such as coffee, tea, soft drinks, and energy drinks, enjoy great popularity. Caffeine is the world’s most |

Buzz: The Science and Lore of Alcohol and Caffeine $47.49 Now, in Buzz, Stephen Braun removes the cloak surrounding alcohol and caffeine. In an entertaining blend of modern science and ancient lore, Braun takes readers on a remarkable tour of two substances as familiar as a cup of coffee or a can of beer and yet as mysterious and unpredictable as the spirits these beverages were once thought to contain. Much of what Buzz reveals contradicts conventional wisdom. Braun shows, for instance, that alcohol is no simple depressant but is, instead, a pharmacy in a bottle mimicking the actions of drugs such as cocaine, Valium, opium, and ether. Drawing on the latest findings of neuroscience, Braun explains how molecules of alcohol interact with the brain to produce the wide-ranging effects for which it is well-known. In clear, non-technical language, Braun explores how alcohol affects sex, the immune system, sleep, and memory. Also probed are the many reasons that alcohol can be so addictive to a minority of users. Caffeine – the most widely-used drug on earth – is equally interesting. Here in Buzz is the first clear and detailed explanation of how caffeine actually revs up the brain and body. This ubiquitous molecule – found in tea, coffee, most soft drinks, chocolate, and hundreds of non-prescription drugs – achieves its many effects in a manner wholly different than is popularly believed. Among other topics, Braun explores the role of caffeine in creativity, sex, athletic performance, dieting, and PMS. He also delves into why caffeine can be so habit-forming and whether caffeine can really be considered addictive . This illuminating and often amusing book is laced throughout with the voices of individuals as famous as Theodore Roosevelt (whocoined the phrase Good to the last drop ) and as ordinary as Kaldi, an Arabian goat herder credited with discovering coffee’s power to stimulate. Shakespeare, Mikhail Gorbachev, Balzac, Buddhist monks, David Letterman, and John Steinbeck make cameo appearances. |

Coffee Talk: The Stimulating Story of the World’s Most Popular Brew $22 What is it about coffee that makes it so popular across so many different cultures? Can it be the caffeine or is there something else about coffee that makes it so alluring? No beverage has broader worldwide appeal. In North America and Europe, the annual amount of coffee consumed is overwhelming. And in China and even in India, the traditional stronghold of tea drinking, the coffee business has grown by leaps and bounds. In this entertaining yet comprehensive book, food expert Morton Satin describes how, in recent times, coffee has become the magnet that draws people together for spirited interchanges of information and ideas. In the intellectual capitals of the world, coffeehouses have been and continue to be the venues where the great minds flock to discuss the latest developments in the arts, sciences, and social philosophies.Satin, moreover, traces the rich and intriguing history of coffee, showing how coffee consumption evolved to fit the social and economic needs of different times. His fascinating narrative dispels common myths and conveys such little-known facts as: the dark coffee bean originated in Africa, not South America, as many believe.Today, of course, it is the indispensable wake-up beverage in most households throughout the West and the East. It is also the mainstay of the Starbucks phenomenon—a chain of coffeehouses whose popularity continues to soar. Satin even goes on to reveal the best techniques for home brewing. And he enlivens his narrative with stories of the fine art of the barista, which includes the World Barista Championship where rival barmen from around the globe display the highest artistry of coffee brewing.Lavishly illustrated, this delightful and informative book is the perfect complement for your next coffee break. |
