It grows as a wild plant on roadsides in its native Europe, and in North America and Australia, where it has become naturalized. Common chicory is also known as blue sailors, succory, and coffeeweed. It is also called cornflower, although that name is more properly applied to Centaurea cyanus. Beignets are good, they are sort of like cinammon dusted doughnuts, not really an apt description but the closest I can get right now.

Chicory coffee is one of those things you either love or hate, so far as I can tell. I like it because it is a beautiful dark colour, it reminds me a lot of the coffee I drank while I was in Italy, you put a bit of warm cream in it and you are good to go. Some people say it is too strong or else that it is too bitter. It’s perfect with beignets, though, because you need something to balance the sweetness. Plain chicory? Can’t say, I’ve never had it though I know some people that use it as a coffee substitute.

If you’re interested, look up the Cafe du Monde in New Orleans, they’ve reopened and they used to mail beignet mix and chicory coffee. I think they even have a website now. Bon appetit!
