Now, I don’t know about you but I’ve always found coffee to be something of a disappointment. The smell of roasting coffee is completely sublime and when you catch a whiff of that fabulous aroma you can’t wait to make a cup and enjoy all the complexity that its fragrance has to offer. But when you actually make it, it never rises to the occasion. It seems just about impossible to capture the potential of the roasting beans.

And it’s only in the last few months I’ve found out why. The answer was right under my nose all along. I bet that just like me you’ve been putting tap water into your filter machine with never a thought about its flavor. Water is water right? Actually, no. Virtually in the US gets their water down a pipe from the utility company. And as you probably know water utilities put lots of chemicals into their water. Now they don’t do this just for the fun of it. It’s to protect our health. They put in disinfectants to keep bacteria levels low. They put in other chemicals to keep Protozoa populations down and they add fluoride to make sure that we never need fillings in our teeth. It’s a good job they do because untreated water is one of the biggest causes of disease such as cholera and dysentery in the Third World. But even when they’re in very low concentrations they still impart a nasty taste to the water.

And that’s why my coffee has always been a disappointment. My chief gripe is that regardless of which type of coffee I used they always manage to leave a bitter aftertaste. I assumed maybe it was because I was using arabica beans, so I changed to robusta. And then back again. I must have bought hundreds of different blends of coffee in the search for a satisfying cup of coffee. I could have saved myself a lot of anguish by buying a Cuisinart DCC from the start. The crucial thing about this machine is that it’ fitted with an activated charcoal filter that filters out just about every trace of chemicals from the water with which your coffee is going to be made. And you won’t believe what difference it makes. You might think I’m going over the top a bit here but if you get one of these machines you’ll be astonished what a superb cup of coffee it will make even with more affordable blends of coffee.

In hindsight of course it all makes perfect sense. Hindsight is a wonderful thing but it’s a bit annoying when it reveals just what an fool you’ve been. The water in your coffee makes up about ninety-nine percent of the entire beverage anyway so it’s unsurprising that its flavor affects the flavor of the drink as a whole.

A cup of coffee is, of course at its very best when it’s really fresh but you will find that when the water has been filtered in this way that even when the jug has been sitting on the hotplate for an hour or more that the coffee still tastes fresh and satisfying.

I don’t know where I’d if I didn’t have my Cuisinart DCC and I can virtually guarantee that you will soon find it an indispensable part of your life too.
